Heat vegetable oil in a large skillet over medium heat. Saute onions until soft, but not browned. Remove from pan, and set aside. Slice the liver into serving sizes, and remove any membrane thats visible.
On a dish, mix together the flour, salt, pepper, garlic powder, onion powder, and chii powder. Pat the liver in the flour mixture, and place into the hot skillet. Brown the liver on each side approxiimately 2 Mins each. Place cooked liver on paper towel to drain oil. Set asideGRAVY
Add season flour(same flour used to fry liver) by whisking it into the hot oil and make a paste, scraping the liver pieces from the bottom of the pan (thegoodness) Make sure your roux (gravy base) is a peanutbutter color before adding liquid.... Add Chicken Broth & Water, continue to whisk so there will be no lumps .. Let gravy simmer on low heat.
Place cooked liver and onions in the skillet with the gravy and let it simmer together over low heat for 10 to 12 minutes, stirring occasionally. You can salt and pepper to taste. NOTE: Do not overcook, liver will be tough .Add Salt & Pepper to taste Enjoy over some White Rice
